Dilis (Dried – Fried Anchoevies Salad) Fish, in any size and type is an all-time favourite on the Philippine table, the tiny Dilis or Anchovies are found close to shore in estuaries, in reef sheltered areas and shallow water, and are a key ingredient for making Patis or fish sauce, they can also be eaten raw or pickled in vinegar as well as fried or cooked different ways.
